Today we're looking down on the pink salt lakes around Gruissan, a seaside resort in the south of France on the Mediterranean coast. The fishing village is circular and surrounds the remains of a 10th century castle. Salt has been harvested in this area for centuries. The lake’s colour comes from a tiny algae called Dunaliella salina. The algae thrives in salty environments and creates a large amount of carotenoids to give the water its gorgeous pink glow.
